Delicious Dried Pineapple

The Bathurst area is well-known for its pineapple farms. A drive through the district reveals fields of spiky fruit in shades of green and gold sweetening in the warmth of the sun. The Big Pineapple – a giant structure at Summerhill Farm – is a local landmark.

While we continue to farm this famous fruit at Limestone Hill, including a limited organic crop, our focus has shifted to the production of dried pineapple. Approximately 100 tons of raw, unpeeled fruit are processed every month to create six tons of perfectly cut pineapple rings. These rings are sold at a variety of retail outlets, including Woolworths stores under their house brand.

When it comes to the processing of pineapples, great care is taken with each step. The fresh pineapples are top ‘n tailed then cored by a custom-designed, manually-operated machine. They are then precision-trimmed and sliced by hand into juicy rings. These rings are laid out on plastic trays and dried on racks for 24 hours. Each dried pineapple ring is sorted by skilled workers into 1st and 2nd grade lots, ensuring consistent quality. Finally, the sealed packs are stored in a darkened cool room, deliciously waiting to be devoured!
